Now, a Ginn Family Farm Favorite Recipe!

Chicken Broccoli Casserole

This hearty dish is a crowd pleaser AND easy to make! You can also double the recipe for a large crowd!! Even your pickiest eater will have a smile on their face when they taste this dish! The following recipe feeds 6 adults.

2-4 boneless, skinless chicken breasts
1 12 oz package of stuffing mix
1 10 oz package of frozen broccoli
1 cup shredded cheddar cheese
1 10.5 oz can of Cream of Chicken soup

1. Preheat oven to 375 degrees.

2. Cook your chicken breasts. (I boil or pressure cook my chicken breasts.) Once fully cooked, set aside and let cool. Save the chicken broth.

3. Boil the broccoli until soft. (You can save time and boil with chicken breasts, if you want.) Drain from water.

4. In a medium sized mixing bowl, pour the stuffing mix and add the Cream of Chicken soup and shredded cheddar cheese. Mix together and stir in broccoli.

5. Shred chicken and mix into casserole mixture. Once all the ingredients are incorporated, put into a greased 9 x 13 casserole dish.

6. Bake at 375 degrees for 15-20 minutes, or until stuffing is golden brown.
